Perogy Green Curry and Tofu Casserole

 

Ingredients

 

Serves 4-5
           
16-24 CHEEMO Perogies (any flavour, any size)
1 350g tofu block
1 small onion
2 cups green curry sauce
½ cup water
1 small tomato
2 green onions

 

Preparation

 

Pan fry the CHEEMO perogies and place in casserole dish. Slice the tofu into 1/8 inch pieces and pan fry. After frying, cut the tofu into smaller strips. Cut the onions into strip and sauté, mix with the tofu and add to the perogies and mix. Add the prepared curry sauce and water, mix gently. Place casserole in a pre-heated oven and bake at 190-204 °C (375-400 °F) for 15-20 minutes. Remove from oven and garnish with a medium to large diced tomato and chopped green onion.
