Pierogy Frittata




Serves 4
12-14 CHEEMO Pierogies (any flavor, any size)
2 strips bacon, cooked and diced
1 tomato small (medium - diced)
2 green onions (chopped)
2 tbsp grated cheese
7 eggs

Filling options: mushrooms, cilantro, chicken, seafood




Pan fry the CHEEMO pierogies and arrange them in a lightly oiled nine inch deep glass pie plate. Sprinkle the bacon, cheese, green onion, tomato over the pierogies (filling may vary as to one’s taste). Break the eggs in a bowl and whisk, add 2-3 tbps of water and whisk a bit more before pouring over the pierogies. Place in a pre-heated oven and bake at 190 °C (375 °F) or 12-15 minutes. Remove from oven and cut into wedges for service. Serve as the breakfast or a compliment to other breakfast offerings.
