Whole Wheat Pierogies and Salmon

 

Ingredients

 

Serves 4

 

Pan fry 24 frozen CHEEMO whole Wheat pierogies as per frying instructions on package.

4 salmon fillets, about 5-6 oz each (150-180 gm.)

1 tsp. vegetable or olive oil

2 lemons – sliced into 8 slices and 1 cut into wedges for garnish

½ small onion – sliced length wise

2 sprigs of fresh dill – chopped fine

 

Preparation

 

Salmon

Preheat oven to 220 °C (425 °F). Line a bake sheet with foil. Place the salmon fillets, skin side down on foil. Coat with oil, sprinkle with salt and pepper if desired. Distribute the sliced onion evenly over the fillets, sprinkle with dill if desired and top with two slices of lemon.  Place a loose piece of foil over the salmon and place in the centre of the 220 °C oven for 15-20 minutes.

Asparagus

Bunch fresh asparagus, wash and trim off the heavy bottom stalk of the asparagus.
Cook in boiling water for 3-5 minutes.
Drain, dredge in butter or margarine and serve.

Serving

Arrange 6 CHEEMO pierogies, 1 piece of salmon and 4-5 asparagus on a dinner plate and garnish with lemon wedges.

Pan-fried pierogies can be served with any of your favorite dinner entrees.
