Marinated Perogy Salad
Ingredients
Serves 4-6
16 – 20 CHEEMO perogies
Baby corn
Zucchini
Peppers
Red onion
Carrots
Broccoli
Celery
Cherry tomatoes
Preparation
Boil CHEEMO perogies (do not overcook) drain, rinse with cold water. Place in a bowl, allow to cool. Choose an interesting variety of vegetables from the list above; cut them in a variety of shapes and sizes (approximately 4 cups). Combine the perogies and vegetables, add a generous amount of Golden Italian salad dressing, marinate for a minimum of 1 hour. Occasionally toss to gently mix to ensure the perogies and vegetables are covered with the dressing.
